Spoiler Alert: Mocha Frappe is McDonald's Shake!

Reinventing things isn't something new. Lets face it, it's been going on for decades. Apple, Paul Rudd, Tina Turner, Toasters, and Instant Coffee are all brilliant examples of how relevance has been reinvented.

First, please understand, honoring re-purposing things is something far too few Americans do; and often when they do, it’s a clumsy exercise in what seems to be embarrassed under achievement.

Enter the new Mocha Frappe from McDonald's.

From first glance we see a war brewing between Starbucks and McDonald's for who has the best summertime-frozen-mind-freeze beverage, but it's much deeper than that. It is an act of pure genius.

McDonald's has simply repackaged their shake in a fancy cup and topped with whipped cream. The same thing that once cost $2 is now $2.79. It's things like this that would have made Richard and Maurice McDonald proud.
Who knows, next we might just see the Double Breakfast EggMc Big Mac, but only time will tell!

Swifty's Modern Day Miracle

Imagine this... A burger cooked to order, battered, deep fried, tossed in a medium buffalo sauce, then presented to you on a toasted roll with a side of sweet potato fries...

I'd like to ask you to join me in a moment of silence to honor this creation.

I do believe this might just top the list of modern day food miracles. To sit atop the list with the likes of Bacon Ice Cream, Golden Oreos & Pretzel Crackers.

This moment reminded me of the Real Men of Genius radio campaign from Bud Light, when they saluted the inventor of the foot long hot dog. I salute you Swifty's!

Double Down Dream

And the clouds parted, and the choir of angels sang "Hallelujah" as I slowly cracked open the corrugated coffin. (That's how I remember it at least.)

KFC's Double Down sure has the flair for the dramatic. Two thick and juicy boneless white meat chicken filets glued together with two pieces of bacon, two melted slices of Monterey Jack and pepper jack cheese and Colonel's Sauce. Hallelujah just might be an understatement.

The sandwich itself was delightful. My only issue was the grease (if you can believe it). Without the bun or utensils, the grease was relentless. However, I think I have solved this issue! The Luther Fried Chicken Double Down!

Step 1: Hit up the the KFC and Krispy Kreme conveniently located in the same parking lot

Step 2: Purchase KFC Double Down and Krispy Kreme Glazed Doughnut through the drive-thru (no need burning calories when you’ll be consuming so many)

Step 3: Speed home in delight with your treasures

Step 4: Slice glazed doughnut in half and invert

Step 5: Remove Double Down and place on bottom “bun”

Step 6: Add extra Colonel’s Sauce and add top “bun”

Step 7: Consume the wonder that is the Luther Double

Step 8: Have a mouth-gasm!

Lemon-Blueberry Muffins

Ingredients
  • 1 stick of butter
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 2 eggs
  • 1/2 cup milk
  • 2 cups flour
  • 2 teaspoons backing powder
  • 1/2 teaspoon salt
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla
  • 2 cups blueberries, frozen or fresh
Directions

Preheat oven to 350 degrees. Grease muffin tins. In a bowl, cream together butter and sugar. Stir in eggs and milk. Add 2 cups flour, 2 tablespoons baking powder, 1/2 teaspoon salt, 1 teaspoon vanilla, and 2 teaspoons lemon zest. Carefully stir in 2 cups blueberries. Divide batter among muffin tins. Bake for 20-25 minutes

Curried Sweet Potato & Chickpea Stew

Steph made this tonight and it was to die for.

1 1/2 Tbsp Canola Oil

1 1/2 Cups thinly sliced onion
2 Cups coarsely chopped green bell pepper
1 1/2 Tbsp Curry powder
1/2 Tbsp Cumin
1/2 tsp salt, divided
1 qt Low-sodium vegetable broth
4 Cups peeled 1/2-inch pieces of sweet potato or butternut squash
1 Can (19oz) unsalted chickpeas, drained
1 Cup light coconut milk
1/4 cup finely chopped cilantro
3/8 tsp Ground black pepper

1. Heat oil in a large stockpot over medium heat. Stir in onion and bell pepper; cook for 8 minutes or until tender.

2. Stir in curry powder, cumin and 1/4 teaspoon salt; cook for 2 minutes. Add vegetable broth and sweet potatoes and bring to a boil; reduce heat, cover, and simmer for 15 minutes or until potatoes are tender.

3. Remove 1 cup of sweet potatoes and mash with a fork. Stir mashed potatoes back into pot and bring to a boil; reduce heat and boil gently for 5 minutes to allow mixture to thicken. Stir in chickpeas, coconut milk, cilantro, and black pepper. Cook for 1 to 2 minutes or until warm throughout. Stir in remaining 1/4 teaspoon salt and serve.
